vegetables and kids

I swore that my children would never turn their nose up at vegetables. That my children would gladly eat almost every green out there.

Then I *had* children.

Sigh

To be fair, my oldest eats just about everything he is offered. He is much less picky at 6.5 than he was at 4. He was, however, less picky at 4 than his sister is. My youngest is my most picky child yet. They do have to try things, but she is the most likely to say "paa, icky". Which she does. None of my children like carrots though, which is really just strange. Granted, my children love fruit, but fruit still isn't vegetables.

So, I will hide some veggies in our food. Not all the time, because I think that children should actually see what they are eating. I'm just not above "boosting" some foods with veggies. Like quiche, or sloppy joes. You can hide a lot in there.

Here are some tips for zucchini.

- grated zucchini is hideable

- grated and peeled zucchini is even easier to hide

- grated, peeled and squeezed (to remove moisture) is the easiest to hide.

Any good tips for veggies?

Lots of veggies can get hidden in spaghetti sauce. I know someone who purees broccoli and puts it into almost everything!!

I like to serve veggies a lot in stir-fry, and they are basically steamed until crispy-hot! I also don't have a typical "sauce" on my stir-fry (the 'jus' from whatever meat, and lots of spice) so the veggie flavour is boosted, not hidden in sugar or soy sauce...

Pumpkin puree can be hidden in cupcakes... just replace the eggs and oil in a cake mix with a large can of pumpkin... makes for very moist yummy cupcakes too!

hey kristen! sweet blog! i've never been here, should have came a lot earlier...
okay, so here's my veggie trick...
when making meatballs or burgers to freeze for later or fresh, i throw a can of mushrooms in the food processer and add them to the mix. it makes the burgers healthier by adding veggies (even though they are canned), and using less red meat. plus, they taste awesome and the kiddies are none the wiser. very juicy!
